Beef prices remain near record highs, and industry experts expect them to stay elevated as the U.S. cattle herd continues to recover from years of drought, rising feed costs, and other production challenges.

According to the latest USDA Cattle Report, there were 86.7 million head of cattle and calves in the United States as of January 1, 2025—the lowest inventory since 1951. The nation’s beef cow herd also declined to 27.9 million head, reflecting another year of historically tight supplies.

Several factors have contributed to these shortages:

  • Years of drought reduced pasture availability across major cattle-producing states.
  • Higher feed, fuel, fertilizer, labor, and financing costs have made it more expensive to maintain and rebuild herds.
  • Rebuilding a cattle herd is a slow process that can take several years, even after weather conditions improve.

To help meet consumer demand, the United States has continued relying on imported beef. Even so, supplies remain tight, keeping prices elevated.

What does this mean for consumers?

It’s simple economics: when supply is limited and demand remains strong, prices increase.

While inflation has eased in many areas of the economy, beef prices have remained stubbornly high because there simply aren’t enough cattle to satisfy demand. Industry analysts expect beef prices to remain elevated until ranchers are able to rebuild the national herd—a process that won’t happen overnight
