Our Commitment to Food Safety

At Smith Family Farms, food safety is a top priority. We are committed to providing our customers with high-quality products that are handled, stored, packaged, and delivered according to recognized food safety and sanitation practices.

This policy outlines our standards for product handling, sanitation, storage, transportation, and customer food safety recommendations. While we strive to maintain the highest standards throughout our operations, customers also play an important role in the safe handling, storage, preparation, and cooking of food products after purchase.

Product Handling & Storage

All meat products are handled in accordance with applicable federal, state, and local regulations and industry best practices.

Our procedures include:

  • Maintaining proper refrigeration and freezer temperatures.
  • Monitoring product temperatures during storage and transportation.
  • Cleaning and sanitizing equipment, work surfaces, tools, and packaging areas regularly.
  • Proper employee hygiene practices, including frequent hand washing.
  • Separation of raw products to minimize the risk of cross-contamination.
  • Routine inspection of products for freshness and quality.

Facility Sanitation Standards

To help ensure food safety, our facility follows sanitation practices that include:

  • Regular cleaning and sanitizing of food-contact surfaces.
  • Use of approved food-safe cleaning products.
  • Routine equipment maintenance and inspection.
  • Proper waste disposal procedures.
  • Pest prevention and control measures.
  • Employee training on food safety and sanitation procedures.

Employees who are ill or exhibit symptoms that could compromise food safety are prohibited from handling food products until it is safe to return to work.

Pickup & Delivery Safety

For customer pickups and deliveries, we strive to maintain appropriate product temperatures throughout the fulfillment process.

Customers should:

  • Refrigerate or freeze products immediately upon receipt.
  • Avoid leaving meat products in a vehicle for extended periods.
  • Transport products in an insulated cooler if extended travel time is expected.
  • Inspect products upon receipt and contact us promptly with any concerns.

Maintain refrigerator temperatures at or below:

Freezer Storage

Maintain freezer temperatures at or below:

0°F (-18°C)

For best quality:

Beef Up to 12 months
Pork 4-12 months
Lamb 6-12 months
Poultry Up to 12 months
Ground Meat 3-4 months
Sausage 1-2 months

Safe Thawing Practices

Never thaw meat at room temperature.

Safe thawing methods include:

Refrigerator Thawing

  • Place meat in the refrigerator.
  • Allow sufficient time for thawing.
  • Keep products in a container to prevent dripping.

Cold Water Thawing

  • Place meat in a leak-proof package.
  • Submerge in cold water.
  • Change water every 30 minutes.
  • Cook immediately after thawing.

Microwave Thawing

  • Follow manufacturer instructions.
  • Cook immediately after thawing.

Preventing Cross-Contamination

Customers should:

  • Wash hands before and after handling raw meat.
  • Use separate cutting boards for raw meat and ready-to-eat foods.
  • Clean and sanitize knives, utensils, and surfaces after contact with raw meat.
  • Keep raw meat separate from fruits, vegetables, and cooked foods.
  • Never place cooked food on a plate that previously held raw meat unless it has been thoroughly washed.

Safe Minimum Internal Cooking Temperatures

For food safety, always use a calibrated food thermometer and verify the internal temperature of cooked products.

Pork Chops, Pork Roasts 145°F (63°C) with 3-minute rest

Fresh Sausage 160°F (71°C)
Poultry (Chicken, Turkey, Duck) 165°F (74°C)
Ground Poultry 165°F (74°C)
Stuffed Meats 165°F (74°C)
Leftovers & Reheated Foods 165°F (74°C)

For larger cuts, temperature should be measured in the thickest portion of the meat, away from bone or fat.

Hot and Cold Holding Guidelines

To reduce bacterial growth:

Cold Foods

Keep at:

40°F (4°C) or below

Hot Foods

Keep at:

140°F (60°C) or above

The temperature range between 40°F and 140°F is commonly referred to as the "Danger Zone," where harmful bacteria can multiply rapidly.

Perishable foods should not remain in the Danger Zone for more than two hours.

Product Inspection Upon Receipt

Customers should inspect products immediately upon pickup or delivery.

Do not consume products that:

  • Have unusual odors.
  • Show signs of spoilage.
  • Have damaged packaging.
  • Arrive at unsafe temperatures.
  • Exhibit excessive discoloration inconsistent with normal product characteristics.
