Both pork tenderloin and beef tenderloin are lean, tender cuts of meat, relatively mild in flavor compared to other cuts of their respective meats.
We’ve cut pork tenderloins into filets and wrapped them with bacon. Cooking bacon-wrapped pork filets is a delicious way to enjoy tender pork with crispy bacon flavor.
Sear the bacon-wrapped pork filets: Heat a skillet over medium-high heat. Once hot, add the bacon-wrapped pork filets to the skillet and sear them on all sides until the bacon is lightly browned and crispy, about 2-3 minutes per side. Lower the temperature and cook to an internal temperature of 145 degrees or you can place the skillet with the filets into a preheated oven and cook about 15 minutes
Rest and serve: Once cooked to your desired level of doneness, remove the bacon-wrapped pork filets from the oven and let them rest for a few minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful cut.
