Have You Heard of Coulotte Steak?

Coulotte steak, also known as picanha, is a cut of beef that comes from the top sirloin cap. It’s a popular cut in Brazilian churrascarias and features a fat cap that adds flavor and juiciness to the meat.

Here’s a simple way to cook coulotte steak:

  • Start by seasoning the steak generously with salt and pepper. You can also add other spices or a marinade of your choice.
  • Preheat a grill or a cast-iron skillet over high heat. You want a hot cooking surface to sear the steak.
  • Place the steak on the hot grill or skillet and sear each side for about 3-4 minutes, or until you get a nice crust.
  • Lower the heat to medium and continue to cook the steak until it reaches your desired level of doneness. For medium-rare, it’s usually around 130-135°F (54-57°C) internal temperature.

Once done, remove the steak from the heat and let it rest for a few minutes before slicing it against the grain and serving.
